If Simon left, it would really depend on who else they put in as to how the show would go.
Simon is entertaining with his sharpness and sarcasm, BUT he is often woefully ignorant about some areas of the music industry. He doesn't play an instrument, doesn't sing himself, knows nothing about country music, etc.
If they picked the new judge carefully, the show might be a lot better.

I think they would move on with another judge. There's way too much money involved now for them not to try.
Simon might be the hardest to replace of the three, but everyone is replaceable. No one person is bigger than the show itself. Ratings might fall for a while, but I think it could recover.

Alright, I have selected:
Would the show go off the air? Get new judge.
They will get a new judge and the show will go on for at least one season, but their ratings will plummet and eventually due to low ratings, it will get canceled.
Simon is the nucleus (glue) of the show. Without him, I don't think the show can survive. They might go on for a season or two, but their ratings will be much lower than when Simon was on. This will cause the other judges to reconsider extending their contract and eventually cause the show to collapse.

if that ever happened i would be shocked but i would still watch the show but american idol would not be the same without simon

I don't really know...I think Simon makes the show more interesting. It would be hard to replace him but I don't think it would completely kill the show. American Idol is too popular to just die out if Simon left.

I think the show would go off air within 2 seasons. I feel that Simon is the most unique person that they could find anywhere.
I would be the third judge for free, lol, i would love to do there job.
