mono means that both the left and right audio of your speaker or headphones will be the same sound and it will sound flat. In stereo, it will sound more realistic/dynamic as the sound from the left and right differs slightly similiarly to what you hear naturally through your left and right ear.
64 kpbs is very low. The higher the # the more sound information that can be reproduced and thus the sound will be more naturally/realistic to real life. However, there are exceptions but it probably confuse you more so I will hold off on explaining further
Wait till you hear the cap I make and compare that with YouTube and that should explain the difference between mono and stereo
